Filipino Adobo Turkey with Garlic Fried Cauliflower Rice recipe🦃🌿  

Ingredients (Serves 4)  

For the Adobo Turkey: 

- 1 lb ground turkey (or turkey breast, sliced)  

- 1/2 cup soy sauce (low-sodium preferred)  

- 1/4 cup apple cider vinegar  

- 4 cloves garlic, minced  

- 2 bay leaves  

- 1 tsp black peppercorns (or ground black pepper)  

- 1 tbsp coconut oil (or olive oil)  

- 1/2 cup water  

- 1 tbsp honey or coconut sugar (optional, for sweetness)  


For the Garlic Fried Cauliflower Rice:  

- 1 medium head cauliflower, grated or riced (about 4 cups)  

- 4 cloves garlic, minced  

- 1 small onion, finely chopped  

- 2 tbsp coconut oil (or olive oil)  

- 2 tbsp soy sauce (low-sodium preferred)  

- 1/2 cup frozen peas and carrots (optional)  

- 2 green onions, sliced (for garnish)  

- Salt and pepper to taste  


Instructions

1. Cook the Adobo Turkey:  

   - In a bowl, mix soy sauce, apple cider vinegar, minced garlic, bay leaves, and black peppercorns.  

   - Heat coconut oil in a skillet over medium heat. Add ground turkey and cook until browned.  

   - Pour the soy sauce mixture over the turkey. Add water and honey (if using). Simmer for 15-20 minutes until the sauce thickens.  


2. Prepare the Garlic Fried Cauliflower Rice:  

   - Heat coconut oil in a large skillet or wok over medium heat.  

   - Sauté onion and garlic until fragrant (2-3 minutes).  

   - Add riced cauliflower and frozen peas/carrots (if using). Stir-fry for 5-7 minutes until tender.  

   - Season with soy sauce, salt, and pepper. Garnish with green onions.  


3. Serve:  

   - Plate the Adobo Turkey alongside the Garlic Fried Cauliflower Rice.  

   - Optional: Top with a fried egg for extra protein.
