Instant Pot Shredded Buffalo Chicken 

Ingredients (Serves 6)  

- 2 lbs boneless, skinless chicken breasts (or thighs)  

- 1/2 cup buffalo sauce (adjust to taste)  

- 1/4 cup chicken broth (or water)  

- 1 tbsp olive oil or avocado oil  

- 1 tsp garlic powder  

- 1 tsp onion powder  

- 1/2 tsp smoked paprika  

- 1/2 tsp black pepper  

- 1/4 tsp salt

Instructions  

1. Prepare the Chicken:  

   - Season the chicken breasts with garlic powder, onion powder, smoked paprika, black pepper, and salt.  


2. Sear the Chicken (Optional):  

   - Set the Instant Pot to “Sauté” mode and heat the olive oil. Sear the chicken breasts for 2-3 minutes per side, until lightly browned.  


3. Pressure Cook:  

   - Add the chicken broth and buffalo sauce to the Instant Pot. Close the lid and set the valve to “Sealing.”  

   - Cook on high pressure for 10 minutes. Allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.  


4. Shred the Chicken:  

   - Remove the chicken from the Instant Pot and shred it using two forks. Return the shredded chicken to the pot and stir to coat it with the sauce.  


5. Serve:  

   - Use the shredded buffalo chicken in wraps, salads, or as a topping for rice bowls. Add optional toppings like celery, carrots, blue cheese, or ranch dressing.
