Mochi Protein Balls

Ingredients (Makes 8-10 balls)  

For the Mochi Dough:  

- 1/2 cup glutinous rice flour (also called sweet rice flour)  

- 1 scoop vanilla or unflavored protein powder (whey or plant-based)  

- 1/4 cup unsweetened almond milk (or water)  

- 1-2 tsp zero-calorie sweetener (optional, for extra sweetness)  


For the Filling:  

- 1/4 cup red bean paste (store-bought or homemade)  


For Coating (Optional):  

- 1 tbsp cornstarch or potato starch (to prevent sticking)  


Instructions 


For the Mochi Dough:  

1. Mix the Dough:  

   - In a microwave-safe bowl, combine glutinous rice flour, protein powder, almond milk, and sweetener (if using). Mix until a smooth dough forms.  


2. Cook the Dough:  

   - Microwave the dough for 1-2 minutes, stirring every 30 seconds, until it becomes translucent and elastic. Alternatively, steam the dough in a heatproof dish for 10-15 minutes.  


For Assembly:  

1. Prepare the Filling:  

   - Divide the red bean paste into 8-10 small portions (about 1 tsp each). Roll into balls.  


2. Shape the Mochi Balls:  

   - Dust your hands and work surface with cornstarch or potato starch to prevent sticking.  

   - Take a small portion of the cooked mochi dough (about 1 tbsp) and flatten it into a circle.  

   - Place a red bean paste ball in the center and wrap the dough around it, sealing the edges. Roll into a smooth ball.  


3. Serve:  

   - Dust the mochi balls with additional cornstarch or potato starch if needed. Serve immediately or store in an airtight container.
