Polish Pierogi-Stuffed Chicken with Sauerkraut recipe🐔🥟  

Ingredients (Serves 4)  

For the Pierogi Filling:  

- 1 cup mashed potatoes (prepared with butter and milk)  

- 1/2 cup shredded cheddar cheese  

- 1/4 cup sautéed onions  

- 1/4 tsp garlic powder  

- Salt and pepper to taste  


For the Chicken:  

- 4 boneless, skinless chicken breasts  

- 1 tbsp olive oil or butter  

- 1 tsp smoked paprika  

- 1/2 tsp garlic powder  

- Salt and pepper to taste  


For the Sauerkraut:  

- 2 cups sauerkraut (drained and rinsed if too tangy)  

- 1/2 cup diced onions  

- 1 tbsp olive oil or butter  

- 1/2 tsp caraway seeds (optional)  

- 1/4 cup chicken broth  


Instructions  

1. Prepare the Pierogi Filling:  

   - In a bowl, mix mashed potatoes, cheddar cheese, sautéed onions, garlic powder, salt, and pepper. Set aside.  


2. Stuff the Chicken:  

   - Preheat oven to 375°F (190°C).  

   - Butterfly each chicken breast by slicing horizontally, leaving one side intact.  

   - Stuff each breast with 2-3 tablespoons of the pierogi filling. Secure with toothpicks.  

   - Season the outside of the chicken with smoked paprika, garlic powder, salt, and pepper.  


3. Sear the Chicken:  

   - Heat olive oil or butter in an oven-safe skillet over medium-high heat.  

   - Sear the chicken for 2-3 minutes per side until golden brown.  


4. Bake the Chicken:  

   - Transfer the skillet to the oven. Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).  


5. Prepare the Sauerkraut:  

   - While the chicken bakes, heat olive oil or butter in a skillet over medium heat.  

   - Sauté onions until softened, about 3-4 minutes.  

   - Add sauerkraut, caraway seeds (if using), and chicken broth. Simmer for 10-15 minutes until flavors meld.  


6. Serve:  

   - Remove toothpicks from the chicken. Serve each breast with a generous portion of sauerkraut.
