Sweet Potato Protein Brownies

Ingredients (Makes 9 brownies)  

- 1 cup mashed sweet potato (about 1 medium sweet potato, cooked and peeled)  

- 1/2 cup creamy almond butter (or peanut butter)  

- 1/4 cup unsweetened cocoa powder  

- 1 scoop chocolate protein powder (whey or plant-based)  

- 1/4 cup oat flour (or rolled oats blended into flour)  

- 1/4 cup maple syrup or honey (or sugar-free syrup for lower calories)  

- 1 tsp vanilla extract  

- 1 tsp instant espresso powder (or 1 tbsp strong brewed coffee)  

- 1/2 tsp baking powder  

- 1/4 tsp salt  

- 1/4 cup dark chocolate chips (optional, for extra indulgence)  


Instructions 

1. Prepare the Sweet Potato:  

   - Cook the sweet potato by boiling, steaming, or microwaving until tender. Peel and mash until smooth. Measure out 1 cup.  


2. Mix the Batter:  

   - In a large bowl, combine mashed sweet potato, almond butter, cocoa powder, protein powder, oat flour, maple syrup, vanilla extract, espresso powder, baking powder, and salt. Mix until smooth.  

   - Fold in dark chocolate chips (if using).  


3. Bake the Brownies:  

   - Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper or lightly grease it.  

   - Spread the batter evenly into the prepared dish.  

   - Bake for 20-25 minutes, or until the edges are set and a toothpick inserted into the center comes out mostly clean.  


4. Cool and Serve:  

   - Let the brownies cool completely in the pan before slicing into 9 squares.
